You asked about birthdate of Peter FRIES, son of Michael and Charlotta:

Here is his baptismal record in Wolfstein Churchbook, in Germany:

Friess, Johann Peter son of Johann Michael Friess, smith and citizen at Rossbach and wife Maria Charlotta. Born Dominica I p. Epiph; bap. 17 January, 1727. Sponsors were Daniel Fechter, citizen at Rossbach; Peter Klein, blacksmith and citizen at Rossbach; and Maria Angelica, Christian Diehl, citizen at Rutzweyler's (Rutsweiler) wife.

So we know he was born at least by 1/17/1727. I don't know when Dominica I p. Epiphany is! But maybe somewhere someone (Gregg?) has a record of the church dates by their religious names then!

He died abt. or before 12/27/1757 as the accounting report submitted by his widow, Sibilla Margaret, and her new husband, John Steyerwalt, to the court in 6/1760 showed disbursements first made by the estate on 12/27/1757. So I determined he died at least by this date!

Know all men by these presents, that we, John Steyerwalt, of Albany Township in the county of Berks in the Province of Pennsylvania, yeoman, (who intermarried with Sybilla Margaret, the widow of Peter Fries, late of same township, yeoman, dec'd; Mathias Lay of the township of Greenwich in the said county, taylor[tailor], and Valentine Korber of the town of Reading, in the said county, innkeeper, are held and firmly bound unto William Plumstead, Register General for the Probate of Wills and granting Letters of Administration in and for the Province of Pennsylvania in the sum of two hundred pounds lawful money of the said Province, to be paid to the said William Plumstead, Register General, his certain attorney, executors administrators or assigns to which payment well and truely to be made, we do bind ourselves, our heirs, executors, and administrators and every of them, jointly and severally, firmly by these presents, sealed with our seals, dated the twenty-first day of June in the year 1760.

(It is concluded that Peter FRIESS died shortly bef 12/ 27/1757. This is based on the accounting papers filed by the administrators which show payments made beginning with that date):

Further, as proof that he had 2 children, is Orphan's court request of 8/1763 by his brother Johannes who was trying to settle his own father's estate. (Johan Michael had died sometime bef 8/1762, and Johannes had his estate to bicker with since Simon, the oldest, refused his share of the property from Michael!)

To the Honorable the Justices of the Orphans Court of the County of Berks holden at Reading in and for the said county
the 29th day of August in the year 1763:
The petition of Johannes Fries, second son of Michael Fries, late of the township of Albany, in the said county, blacksmith, who dyed intestate:
HUMBLY SHEWETH:
That the real estate of the said intestate was valued to your petitioner by an inquest awarded by the Orphans Court, and that your petitioner's brother, Peter Fries, died intestate since the decease of the said Michael Fries deceased, leaving a widow, to wit: Anna Margaretta, and two children, to wit: Peter and Maria, both under the age of 14 years and incapable to accept of bonds for their shares of the real estate afsd. Your petitioner therefore humbly prays your Honours would be pleased to appoint guardians for the said children. SIGNED: Johannes FRIES.

The brother of the petitioner, Simon Fries, was appointed guardian then, and also children of their deceased brother Henry who had died in the interim:
